Chicken Noodle Soup

This Chicken Noodle Soup is a quick 30 minute dinner, with tender carrots, celery, juicy rotisserie chicken, and perfectly cooked noodles.

Ingredients


  • 3 Tablespoons butter, salted

  • ½ onion, chopped

  • 2 cups chopped carrots

  • 2 cups chopped celery, about 6 ribs

  • 2 cups chopped rotisserie chicken

  • 1½ teaspoon garlic powder

  • 2 teaspoons chicken bouillon

  • ½ teaspoon ground pepper

  • ½ teaspoon dried thyme

  • 4 cups chicken broth

  • 3 cups water

  • 2 cups egg noodles

Instructions


  1. In a pot over medium heat melt butter, then add onion, carrots, and celery. Saute for 8-10 minutes, stirring occasionally until tender.

  2. Add chicken, garlic, chicken bouillon, ground pepper, thyme, chicken broth, and water. Mix well.

  3. Bring to a gentle boil, then add the egg noodles. Simmer for 10 minutes, until noodles are tender and cooked through. Remove from heat and serve.


Notes:

To store: cool to room temperature then transfer to an airtight container and refrigerate for up to 3 days. May freeze for up to 3 months. Add extra salt or pepper to taste.
